Ingredients
| 1/2 cup(s) fat-free chicken broth | |
| 1 medium shallot(s), coarsely chopped | |
| 15 oz canned cannellini beans, undrained | |
| 8 oz low-fat plain yogurt | |
| 1/4 tsp black pepper | |
| 1 tbsp fresh lemon juice | |
| 1 tbsp mint leaves, fresh, minced |
Instructions
- Bring chicken broth to a simmer in a small pot. Add shallot and simmer until tender, covered, about 5 minutes.
- Place shallot and broth in a blender. Add beans, yogurt and pepper; purée. (OR USE IMMERSION BLENDER). Remove to a medium bowl. Stir in lemon juice and mint; chill. Yields about 1 cup per serving.
