Chilled White Bean and Mint Soup

Ingredients


1/2 cup(s) fat-free chicken broth

1 medium shallot(s), coarsely chopped

15 oz canned cannellini beans, undrained

8 oz low-fat plain yogurt

1/4 tsp black pepper

1 tbsp fresh lemon juice

1 tbsp mint leaves, fresh, minced

Instructions

  • Bring chicken broth to a simmer in a small pot. Add shallot and simmer until tender, covered, about 5 minutes.

  • Place shallot and broth in a blender. Add beans, yogurt and pepper; purée. (OR USE IMMERSION BLENDER). Remove to a medium bowl. Stir in lemon juice and mint; chill. Yields about 1 cup per serving.
